Lunch omakase: 45 minutes to an hour. The counter serves a set 10–14 piece course and tables turn fast. You sit, eat, and leave. This is the money-saver and the quick lunch option.
Solid dinner counter: 1.5 to 2 hours. The chef paces the courses, talks to guests, and takes time with each piece. A 12-piece course might come with tea after. You’re not rushed.
Luxury counter: 2 to 3 hours or more. A 20-piece course at a high-end place can take 2 hours if the chef is pacing and talking and telling the story of each fish. At the very top tier it can be longer. The meal is the ritual.

How much will I eat?
Omakase piece counts range from 10 at the entry level to 14–26 at mid-range and luxury counters. At ¥4,500–¥7,000 lunch courses you’ll typically get 12–14 pieces. At ¥10,000–¥20,000 dinner courses, 15–20 pieces is common. Each piece is a single nigiri or a roll; by the end of the meal you will be full.
