What the experience is like

You arrive at a small counter run by a husband-and-wife team. You sit, they serve Edomae-style sushi (the classic Tokyo pre-seasoned style), and you talk. Nicolas said, "Apart from the food, which was amazing, our hosts also made excellent conversation partners." Mara called it "so delicious and fun. Genuinely the best sushi we had our entire trip." That’s it. No kitchen pyrotechnics. No group dynamics. Just good sushi, good hosts, and time to breathe.
